Our organic Peru comes from the co-op, Aprocanorsi which started with the aim of improving the lives of its members through production, storage, marketing, and export of green coffee. Most of its members are smallholders, who manually de-pulp their cherry by hand and ferment them for an average of 18 to 24 hours and dry for 15 days on raised beds made of wood and mesh lining. Coffees from this region of Peru are unique yet offer a consistency roasters and coffee lovers can count on. The Calabozo offers a super balanced cup with notes of cane sugar, milk chocolate and citrus.
